Pacific Vegan Cookbook
Award-winning cookbook Pacific Vegan, by Vittoria Pasca, is proudly 100% plant-based so that Pacific fruits and vegetables can get the spotlight they deserve.
Vittoria, a Suva-based nutritionist, has been teaching healthy cooking classes with Fijian plants since 2017 and decided to write her own cookbook in order to share her knowledge with a broader audience.
In June 2022 the cookbook won the 'Best in the World' award for Fiji in the South Pacific category at the World Cookbook Fair - Gourmand International - at the Gourmand Awards in Umea, Sweden. That's testament to what a wonderful cookbook it is, packed with delicious, nutritious recipes and beautiful pictures of the dishes. Seven Pacific Plants are the focus of the cookbook
The plant-based cookbook focuses on seven Pacific plants as below. Pacific Vegan describes their nutritional benefits and explains how to prepare them in ways that are healthier and better preserve their nutrients. The cookbook contains over 40 healthy and creative fusion recipes made from local ingredients from the Pacific. They are largely low-fat, low-sugar and completely free from cholesterol

About Vittoria Pasca
Vittoria Pasca is an Italian nutritionist and healthy food blogger specialized in vegetarian and sports dietetics. She lives in Suva, Fiji, where she created Healthy Eating Fiji, a business promoting healthy nutrition and lifestyles.
She likes cooking with local plants and creating nutritious recipes that she shares on her blog and Facebook page, Healthy Eating Fiji. She combines different ingredients to make sure meals are balanced and nutrients are well absorbed.
She is the co-founder and lead organiser of VegFest Fiji, a festival promoting plant-based diets and the consumption of local fruits and vegetables.
She is also a certified Lifestyle Medicine professional.
